Ingredients

  • 4 salmon fillets
  • 1.5 cups jasmine rice
  • 1.5 cups water
  • 1/4 cup soy sauce
  • 3 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 garlic cloves, minced
  • 1 cup shelled edamame
  • Sesame seeds and sliced green onions for garnish

Instructions

  • Add rice and water to the Instant Pot
  • Place the trivet on top of the rice
  • Mix soy sauce, honey, rice vinegar, sesame oil, and garlic to make the teriyaki glaze
  • Brush salmon with half the glaze and place on the trivet
  • Seal and cook on High Pressure for 5 minutes
  • Quick release carefully
  • Remove salmon and trivet
  • Fluff rice and stir in edamame
  • Drizzle remaining glaze over salmon
  • Serve salmon over rice and top with sesame seeds and green onions
